Description

This Green Goddess Salad is a vibrant, flavor-packed dish featuring crisp lettuce, crunchy cabbage, and a creamy homemade green goddess dressing bursting with fresh herbs. Ingredients

For the Salad:

  • 1 small head of green cabbage, finely chopped

  • 1 large cucumber, diced

  • 45 green onions, thinly sliced

  • 1 cup fresh parsley leaves, chopped

  • 1 cup fresh basil leaves, chopped

  • 2 tablespoons chives, chopped (optional)

For the Green Goddess Dressing:

  • 1 cup plain Greek yogurt (or vegan alternative)

  • 1/2 avocado

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice (freshly squeezed)

  • 2 tablespoons rice vinegar

  • 2 garlic cloves

  • 1/2 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • 1/4 cup chopped green onions

  • 1/4 cup chopped parsley

  • 1/4 cup chopped basil

  • 2 tablespoons nutritional yeast (optional, for umami flavor)


Instructions

 

  1. Prepare all vegetables: finely chop the cabbage, dice the cucumber, and slice the green onions. Place them in a large mixing bowl.

  2. Add chopped parsley, basil, and chives (if using) to the bowl.

  3. In a blender or food processor, combine all the dressing ingredients. Blend until smooth and creamy. Taste and adjust seasoning if needed.

  4. Pour the dressing over the chopped vegetables and toss thoroughly to coat.

  5. Chill for 15–30 minutes before serving for best flavor, or enjoy immediately.
