Description

This Asian Cold Noodle Salad is a refreshing and vibrant dish perfect for warm weather. Packed with crisp vegetables, tender noodles, and a savory sesame-soy dressing, it’s a quick and easy recipe ideal for lunch, potlucks, or a light dinner. It’s vegan-friendly, customizable, and full of bold flavors that make every bite satisfying and delicious.


Ingredients

  • 8 oz soba noodles (or spaghetti noodles as an alternative)

  • 1 cup shredded carrots

  • 1 cup thinly sliced red bell pepper

  • 1 cup julienned cucumber

  • 1/2 cup shredded purple cabbage

  • 1/4 cup chopped green onions

  • 2 tbsp chopped fresh cilantro (optional)

  • 1 tbsp sesame seeds (for garnish)

For the Sesame Dressing:

 

  • 1/4 cup soy sauce (low sodium preferred)

  • 2 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tbsp honey or maple syrup

  • 1 tsp grated fresh ginger

  • 1 garlic clove, minced

  • 1 tsp sriracha or chili paste (optional, for heat)


Instructions

  • Cook the soba noodles according to package instructions. Drain and rinse under cold water until completely cooled. Set aside.

  • In a small bowl, whisk together all the dressing ingredients until smooth and combined.

  • In a large mixing bowl, combine the cooked noodles, carrots, bell pepper, cucumber, cabbage, green onions, and cilantro.

  • Pour the sesame dressing over the salad and toss well to coat everything evenly.

  • Chill in the refrigerator for at least 15 minutes to allow the flavors to meld.

 

  • Garnish with sesame seeds before serving. Enjoy cold!

Notes

  • Swap soba noodles with rice noodles or whole wheat pasta for variation.

  • Add grilled tofu, shrimp, or chicken for extra protein.
