Ingredients
8 oz soba noodles (or spaghetti noodles as an alternative)
1 cup shredded carrots
1 cup thinly sliced red bell pepper
1 cup julienned cucumber
1/2 cup shredded purple cabbage
1/4 cup chopped green onions
2 tbsp chopped fresh cilantro (optional)
1 tbsp sesame seeds (for garnish)
For the Sesame Dressing:
1/4 cup soy sauce (low sodium preferred)
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tsp grated fresh ginger
1 garlic clove, minced
1 tsp sriracha or chili paste (optional, for heat)
Instructions
Cook the soba noodles according to package instructions. Drain and rinse under cold water until completely cooled. Set aside.
In a small bowl, whisk together all the dressing ingredients until smooth and combined.
In a large mixing bowl, combine the cooked noodles, carrots, bell pepper, cucumber, cabbage, green onions, and cilantro.
Pour the sesame dressing over the salad and toss well to coat everything evenly.
Chill in the refrigerator for at least 15 minutes to allow the flavors to meld.
Garnish with sesame seeds before serving. Enjoy cold!

Swap soba noodles with rice noodles or whole wheat pasta for variation.
